In "Activity stream" I can see only Notes
Is there a parameter to make it show all elements that a user has added or modified?
If not is there another form to see all items added or modified by a user?

Not yet.
We are working on completion of Activity Stream to add major changes on items.
Now, you can use "global view" with sort on last update date to see last changed items.
