2) DEfine workflows and how they use status
3) Select workflow to use for each project type

As far as I understood, the list of state is common for all elements, including: project, activities, tickets, right?
I am working on a simplified version of ProjeQtor to help my team to use it. Simplifying the workflows are part of my job right now.

List of statuses is common to all items, but you can define workflow to use on each different type of item, each workflow using only some status
So you can manage to show different status for every item type.
