I saw that a welcome evolution of multiple update mode is planned to allow all fields to be modified.
Will it always be possible to modify several fields at once ?
This is indeed sometimes mandatory in order to be able to make certain modifications according to the consistency checks of the system.
Example : change the project and the planning activity of a ticket.

No, it won't.
You'll have to do things is several changes.
For instance in your case : change planning activity to null, then change project, then move back to planning activity of new project.

Unfortunately, if the 2 fields to modify are mandatory, it will not work. In our example, this is the case because the planning activity is mandatory for certain types (via the screens customization plugin).
Other than that, the ability to update multiple fields at once is a useful and relevant feature.
If you could find a way to keep that possibility, that would be great 😉
