Whilst, the documentation says that each resource is attached to a calendar to define its working days,
I am unable to create a specific calendar with Saturday and Sunday as working days (they are greyed out)).
I have one resource 7/7 24h/24h.

So that you can make a 24/7 calendar you need to go to the global parameters to indicate that weekends are potentially working days.
Be careful, however, with other calendars where you will have to check off these two days so that they are recognized as non-working.
Which calendar is being used for the planning calculation ? Task "responsible" or "task assigned resource"? Apparently, I cannot get it work.
When activity has no assignement (for instance fix duration tasks), duration is calculated from Project Calendar.
When activity has assignment with assigned work, duration is calculated from Resource calendar.
