Is it possible to organize the attached files by Project and by activity in the project? Failing that, can we put all the documents from the same activity or the same project in a single attachment folder?

document directories are there for that!
You can create as many as you want and manage rights directly on each directory
Ok for the linked documents, i understand.
But in this case, I was talking about attached files like meeting support or a final production of an activity, those which are put by default in the attachment_* directories.

No, attachments are stored on same folder whatever the project.
