Go to global parameters and set up days off or worked by week into the first tab.
We do not set different days of the week being planified by ressource on each project.
Calculation take into account several levers you set up to planify on days opended for whole projects.
It is a dynamic capacity planning ASAP.

Thanks Alainforma, but in the gantt of a specific project how I do so that it takes me every day of the week, and does not alter the rest of the projects.
You cannot specify a calendar per project.
You can only set one per resource :
- Set all days open.
- define a calendar A with no week-end (all days open)
- define a calendar B with week-end closed.
- for resources working on projects for full week, select calendar A
- for resources working on projects with week-ends, select calendar B
