Is it possible to view or preview office documents in Projeqtor in the same way images can be viewed? Having to download the document first before it can be viewed is not ideal.

No, tthis is not an existing feature.

Displaying office documents would require installation of dedicated applications on the server (onlyoffice or similar).
This is not is the scope of projeqtor which is a pure php sorftware.
Possibly this could be a special feature for hosting service.
