Hi, is there a reason why there are workflows defined for projects, activities and milesones? As a matter of fact, the progress is indicated whith the completion.

Yes, there is.
Activities can have status like ticket : analysing, accepted, in progress, done, validated and so on.
Porject could have simplest workflow : under estimate, validated, in progress, done, closed.
But all is up to you !
