It can be useful to have in front of some "sensitive" information, a checkbox "is internal" or "is visible".
When we work with many externals providers, some informations in the same screen would be only visible to internal as long as not explicitly marked as visible for externals.
Examples :
- Some informations about your customer in the contact informations, "business phone", "business fax", etc.
- Internal tasks and visible tasks : when the manager is working on the same project with many externals providers and must coordinate them (for his customer)
- Tasks : the comments

Privacy restrction already exists on Notes and Attachments : private, team or public visibility.
To extend it to "sensitive" fields, all these fields should be explicitely listed.
