Version used: 7.0.9
Steps to reproduce:
- Create a document A
- Copy document A into document B
- Document B has status copied
- Add a version to this document. Status of this version is Recorded, but status of document B is still copied.
- Edit this version and change status to Validated for example. Status of this version is Validated, but status of document B is still copied.

EDIT : I cannot reproduce with described use case. It works fine if you copy and add version.
Issue is when you copy with version : version keeps current status, but document is in status copied. Then is you change status of version, document status does not move (workflow prohibits this move)
Yes, you're right Document A has a version added 😉
