Have a look at the message on the mailbox history.
Possibly max mails per hours is passed.

I'd configure le input mailbox to acces to 999999 mails per hour. That's not the issue.
The last message before it closes is often something like :
TLS/SSL failure for ssl0.ovh.net: SSL negotiation failed - mailbox closed
or
No such host as ssl0.ovh.net
Is there a way to create a notifying message whenever an input mailbox closes?

Issue comes from connection to your mailbox.
Strange as ovh servers should always be up...
Idea about notifications should be good.
