I'd need to restrict the access to only few types to a certain profile, in this case I've assigned the access to few ticket types:
However, when I try to access with an user belonging to those profile I don't see any ticket type: the combo is disabled and contains no entry
May you please check this behavior?

Don't you have other restrictions (on project type, on project) that may also be applied, and so lead to empty list ?

First of all let me congratulate you for the constant and precise assistance you give us here in the Forum, your help is really precious.
I humbly apologize, I forgot to mention that I was playing and experimenting with the field visibility in the file "modelTicketSimpleMain.php" and that therefore the behavior I obtained does not belong to the official Projeqtor release.
I gladly followed your advice, I had an error in my settings: now in the Ticket section the ticket types are correctly filtered according to the profile and project type settings.
I'll ask you one last question: are the filters on ticket types also applied to the "Ticket simple" section? I would like to change the visibility of the idTicketType field to "idTicketType" => "required" to allow a certain user profile to choose from a limited number of ticket types, however the type filtering here does not seem to apply.

No, custo on Ticket is not applied on TicketSimple.
