I created two activities, both assigned to the same resource. Rate of the resource is 100%. One activity is on the whole year, regular between dates, priority 500. The other one is urgent (I used asap and priority 1). I would like the resource to work only on the urgent activity before to go back on the "regular between dates" activity. How could I do that? The plannification keeps the "regular between dates" activity in parallel with the "as soon as possible" one.

Have a look at the planning calculation mode in the online manual (planning 3/5).
You'll better understand how planning is calculated, and then have it fit your needs.
The easyest way to get what you expect is to define the urgent activity as a predecessor of the reglar activity...
