i do not find the utility of En service status ? Is there a difference with Done status?

Hello,
Status list is editable, you can use it as you need it.
For example you can use status done when your ticket is finished and into service when it is delivered.

It is different, but "En service" status will be used only for Versions.
Macro status for a version is "in progress", "done", "into service", "closed" (not into service any more)
