We create an epic for each new fonction or for a modification in our software.
How can I record them in a backlog in order to plan them ?
How can I document such an epic with impacts (e.g. documents, teams involved) ?

You can creat a global project (which will represent your software) , and create modifications or new functions in related activities.
This avtivities can be linked to documents and versions, other activities, and many elements existing in Projector.
Of course you can assign a team to an activity.
