Hello,
after a server migration, we have problems with all accented characters.
Can you tell me where does the problem? Is this a problem with PHP 5.6? It's the only big difference between the two servers?

No, it is a difference with encoding.
Check your MySql configuration to ensure server is in UTF-8 format.

NB : possibily you'll have to re-import data to retreive accents.
