I would like to format document's references with "external reference". Default format is {PROJ}-{TYPE}-{NUM}-{NAME}. Please can you tell me the list of mnemonics I can use ?

You have 3 reference fields in Document
reference (beside ID) : like any other reference, it is definied automatically, format can contain {PROJ} for project code, {TYPE} for type code, {YEAR} for current year and {MONTH} for current month.
document reference : defined automatically, can contain {PROJ} for project code, {TYPE} for type code, {NUM} for number as computed for reference, and {NAME} for document name.
external reference : this field is for external reference (customer or else) and is manually entered, no automatic definition
