How to include the date in the format for documents reference formatting ?
I've tried :
{DATE},
{TODAY},
{YEAR}{MONTH}{DAY},
{YEAR}-{MONTH}-{DAY},
{YEAR}{MONTH},
{YEAR}-{MONTH},
{YEAR}
It dont works.

You cannot.
Available fields are listed on User doc.
Global parameters for document reference formatting
format : can contain {PROJ} for project code, {TYPE} for type code, {NUM} for number as computed for reference, and {NAME} for document name.
Suffix : can contain {VERS} for version name.
But it is very strange to add date in doc, unless you define doc as "chronological" (version of document is date).
