I want to remove some descriptions in the Project (creation, lecture) : contract code, client...
Are these descriptions are optional?

I want to remove some descriptions in the Project (creation, lecture) : contract code, client...
Indeed these descriptions are optional and you can not remove or hide these fields.
But you can ignore them if you don't need it.
However there is a way to remove field, you can personalize your screen with our Screen Customization plugin, you should visit our shop plugin screen customization.

Only solution to "hide" these fields is to use our "screen customization" plugin.
