I select some restrictions at profile level (unchecking some ticket types), but tickets from that ticket type are still available for user with that profile.

Restriction show (tickets) ticket types that are checked, or all if none is checked

No i confirm that user is not able to create or update a ticket for that ticket type if restricted, but he is still able to view them in the list above...

Of course as it is the expected behavior...
...unless you set to Yes global parameter "restriction on types by profile hides items"
