Hello,
I would like to know if there is a way to set the mail sender of a notification - like a change of status on an activity - to be the one performing the action (from the user information if present) and not the one by default (defined in configuration->Global parameters - Emailing - 'from' email when sending mails)

Yes, there is the option "send emails as current user"
But pay attention that most mail servers will reject mails sent as another user than the one connected .
