I've add or change new user profiles. Since all user profiles names are contained between square brackets. How is it possible to remove them?

It just mean the name of the profile is not translated.
As profiles created by default fit most need, we decided to "translated" name of profiles.
As your new profiles correspond to no translation code, it appears between brackets.
Nothing blocking.
You can improve this with the "Personalized translation" plugin. With it you'll be able to add new translation codes.
