You cannot change left work in the progress section.
You can change left work :
=> in the Real Work Allocation screen : each resource should re-evaluate left work.
=> in the assignment definition : tjhe project leader can update left work if needed

When resource has finished work before plan, he must set left to zero, to tell the planning calculator that there is no much work to do.
This will adpat re-assessed work.
And you will thn be able to close the activity.

As a project Manager, can I choose the day to validate the Real Work Allocation(RWA)? For example, every member submit his Real Work Allocation every day at 8PM, what's happen if (as a project manager) I want to validate this RWA two days later without "un-summit" the d-day (today), is it possible?

I don't know if it is a bug but with IE (only IE, with Chrome it is working fine) , when a ressource want to submit his Real Work Allocation, a disconnection is suggested, is it normal? or I need to able a parameter on IE?

I cannot reproduce.
Looking at your screenshot I guess you are in "IE7 compatibility" mode (no transparency on buttons shows non CSS3 compatibility).
I think issue come from this compatibility mode.
V5.1 fixes this by forcing edge mode.
