In fact I already have a holiday schedule for my whole team. I would like to fill it out the calendar to dispose of my resource capacity over the year.

For generic off days, use calendar (you can use default one, that will be used on planning view). You can create new calendar for other specific iff days (for instance for resoucez working in different countries with own off days)
For individual off days, create new administrative project with one or several activities and enter real work in the future to enter off days)
