Is it possible to change the color of an activity in the planning view?
Is it possible to view the avancement of an activity directly in the planning view?
Is it possible to give abilitation for a ressource (with an account) to change just an activity, not all of them?

NO

Yes, progress is displayed as tiny grey bar inside main bar.

Just one, no, not directkly.
But you can set access rights so that the resource (depending on his profile) can update only activities he is responsoble for.
So he won't be able to update activities unless you set him responsible of the activity.
