No screen customiozation cannot manage menu names.
This is done by Personalized translation plugin, when you can replace any caption in any language.

Yes, you cannot rename existing fields.
You can just name and rename your new fields.

Have a look at user manual of plugin.
Take care "default" value is managed only on creation.
It is not a calculated value, unless you set the field as readonly

Lists in the plugin are just lists of choice, they are not customisable objects.

On Parameter > List of values, you'll see all the existing lists of values.

I'm sorry but not a developper. Even when reading the user manual i do not catch what to do. How to set one value as default, for example the first one?

To define a fixed default value, just enter the value : "1" for instance.
To calculate the defaut value, use "###EVAL##xxxx" where xxx is some php code returning the expected value. But sure, you'll need a few ph knowledge to use this.

I'm sorry to say that if i put 1 or 2 for example, value by default is still the same (the figure is the ID of the item, you confirm?)
