Is there a way to assign an activity or ticket directly to a resource without going through the “recorded” status?

No,
Recorded status is always the first status, entry point for every workflow.

Hi Syncro,
my first status is NEW. I always can select a responsible, which is automatically added as a resource after SAVE. All other resources can be added in status NEW, once I saved record for first time. May this helps.
