Under the Organization item there is the possibility to structure its organization in Direction, Service, Sous service etc ... However what is it useful? Is this to isolate projects by structure or entity? Otherwise what page has what function is this useful splitting? To the role of supervisor?

Organization is not to isolate but to consolidate.
It gives an option to consilidate projects independantly to wbs structure.
It also give the ability to manage budgets for organization.
If also give the possibility to restrict visibility on resources (some profiles may see only resources of same organization), to ease selection of resource when allocating resources to project.
