What the goal of the "parent activity" (activité parente in french) field for a task? because dependence is generated by succesor/predecessor filed.

Parent will determine the level in the WBS : task will become a sub-task of the parent.

So, what is the difference between sub project and sub task?

In most concerns there is no.
You can split in project / sub-projects / tasks / sub-tasks as you wish.
But some differences exist, like :
- access rights are defined at project (and possibly or sub-project) level
- access rights calculation may lead to performance issue is you cometo define too many projects
