Hi,
If someone has to give an estimation to a Client Quotation, then most of the time this process takes several hours/days of work, so this work needs to be planned.
It seems to me that Quotations are not in the plan, then a new Activity has to be created for that? What is the best way to do this?

Quotation is the sheet when you quote things.
If you need to record time spent, you have to create an Activity.
Then you can link activity and quotation or select origin of activity as quotation (or reverse)
