Hi,
Can anyone guide me to if it is possible to select multiple activities and then assign (a) resource(s) to them in bulk?

No,
simply because you must specify the assigned work for the resource on each tasks...
But there are some automations, for instance that can automatically assign responsible of activity. So changing responsible on several tasks (through multiple updates mode) may fit your need.
