Hi Babynus,
After that i created a ticket, i can't change the "acitivité de planning". I added a screenshot in order to show you my issue.
Do you know why ?

You cannot change this field when you have entered some real work.
Remove the real work, you'll be able to change this field.

Do you think that it would be better if it's possible to be able to change the field "acitivité de planning" only when you are admin even if there is a real work ?

No.
Restriction is not a security one, but constraint to ensure validity of work sum-up on the project and on the activity.
