When creating an activity, the number of hours must be specified. How can I create an activity with a resource assigned 1h per day on it between two dates, without specifying the total number of hours ?

Hello
you can use the Recurring planning mode. This allows you to set a number of hours per day throughout the project.
It can be bounded by start-finish and finish-finish milestones to adapt to specific dates
