Is it possible to sort the project list (Project : All project) alphabetically instead of by ID ?
If yes, how to process ?

Hello
You can create an advanced filter sorting list as you explained.
You can use the button on the very right side next the selector opening a pop up from which you can make a research by name.
But into the selector we can not sort by name

Project are not sorted by ID, but by WBS.
So if you reorder themp on Gantt chart, you can get the order you wish.
