Hello,
On tickets, is it possible to limit the versions available in the original product version list to the "entry into service" versions (macro status on product version) ?
If this is possible, can you please tell me how to do it ?

No, there is not such restriction possible.
Tickets can be recorded for an original version not in service yet (internal issue, testing phase issue, change resuest, ...)
