Hello,
Activity stream is great to follow work on elements.
It will be great to trace automatic mail too, so it can be set a automatic note like "email #12345 send to 'recept@destination.domain') so you know that automatic mail have been sent and you can easily find it in sent mails screen.

Hi,
This is a good idea.
We are already improving Activity Stream, so that it will show main changes on items (creation, change of status)
Also show send mails is a good option
