Calendar behaviour is very strange: I can set only 1day off. When setting another one the first one setting coming back. Project plan/Gannt chart as well using weekend as working days

No, it's possible to set several off days.
Just click on the button "new"...
It seems this interface for calendar in not very user friendly as your are meny to ask questions about it.
An improvement is planned.

No, planning is not using weekends as working days.
Gantt bars run through week-ends, as they go from start to end, but week-ends are not taken into account.
So, for each day off we need to set a different calendar? For example settings for 26thg to 30th December should add 5 calendars?
Don't you think this is not quite right?

I agree this is not very clear.
Title of item should be "calendar exception".
There is one only Calendar, and in this interface you define exception days (off week days and open week-ends).
This interface will be improved to be more user friendly.
