Controls & Automation -> Workflows -> Authorization to change from one status to another -> Then Click on the Wrench to change what profile you want to see/filter "select profile to show or hide"
There, the profiles already in use cannot be checked, only the profiles not in use can be checked. When you mark the checkbox (only the ones enabled are possible) those profiles are shown and the rest dissapear. So, you can never go back. I mean, you never see the profiles you want to see again! because it is not possible to CHECK them.

It is a really silly mistake, but very power bug. I am generating my own workflow for the activities in our company, and now I am not able to see the profiles of myu interest anymore.
