If setting Cost Visibility to "None Visible" for a given Profile in the Specific Access Mode options menu, it does not allow to see the costs line of a project or an activity, which is correct, but it does allow to see the cost of a given Activity resource in the Assignment list, which I believe should also be hidden.

I never faced this issue because in my config, users how don't see costs cannot add assignments.
But, on the concept you're completely right.

How do you limit users just from adding assignments?
It would be useful to limit the access to Assignments creation/edition independently from the Activity's permissions. For example, I could give update access to a profile to activities but just read access to the assignments.
The reason for this is that project members need to update the activities status in the Activity's screen so they need Editor permissions, but I don't want them to be able to edit/delete the assginments, just view them. This could be a special access mode option.
If the Activity's permission is set to Reader then Assignment's permission would be ignored.
