When editing a specific document version, the (disabled) "update" field (at least for "custom" versioning type, did not check others) always defaults to "no", even if another option was selected via the radio buttons when creating the new version.

It is normal.
When you create a new version, these "update" radio-buttons help define new version number.
When you edit a version, there is no update of the version number, so it is normal so let it to No.
