Is there a way to show the sum of days/hours of non assigned activities in a project? (activities non assigned but with a validated work)
If no, is it possible to add a field in the progress section of the project screen and/or in a status report?

No, not directly.
You can get a synthetic view on Report Planning / Work synthesis per activity.

For information, what you request it what I would call "Commercial Margin" (difference between what is planned and what is sold)
