Could someone explain to me the difference between planned, validated and requested dates and when/how each of these should be used.

Planned : calculated by the application depending on constraints given: availabilities of resources, planning mode, left work...
Valided : dates that you will try to respect in agreement with your client ( or yourself) before or after recalculation, it depends on your strategy.
requested : just an indication on the customer's initial request ( no impact on calculation)
"when and how" depend on PM objectives, i suggest you firstly to read the user guide pressing f1 from dedicated screens
