Hi,
I would like to add to my planning some events that need some ressources (seminar for example) and in consequence, those ressources won't be available to work on projects.
What is the best way to manage that?

Use meetings.
Or you can also use Activity with planning mode "regular between dates" and assign work equal to duration or activity.
