I'm watching the activity type definitions and I'm planning to use "development" when there is a coding/analisys work, and task when there is a systems maintenance work.
But, in the manual the option "development" is called "change request", which is a different job.
What's the explanation or a simple suggestion on usage?

I don' know where you found that develoment is change request.
In projeqtor, there is an object called Change Request, this is not the same as Activities.
About activities types, you can use any you want, you can also create your own.
Just note that type will select the workflow (rules to change status) and some behaviors that can be parameters at type level.
