Is it possible to save or export the entire project (subversion or similar type) or create a label of the entire project to later, be able to view or restore the project at a certain stage?

Yes you can.
-recording a baseline
-Exporting data via csv
-By keeping a simulation environment that suits you
- By checking the box "fix planning"
- By making start the project in 2050 to call it back at the right time
- By typing your project TMP, it will be used as a template to be copyed
it depends on what you want to do. But remember that - the constraints- the conditions- at T0 time spot will be NEVER the same at the T+1 time spot

To export the entire project you have to go element by element (project, ticket, requirements, risks, tests, etc). exporting, it's right? Is there no automatic way to do all exports at once?

On Planning view, you can export project is MS-Project XML format.
NB : only planning elements will be exported, not risks or else.
