Status do not impact the planification and calculation. You can track each stage of your projet changing manually status depending on a single workflow dedicated to a type.
IN global parameters you can set up some mechanisms related to the beginning or the ending workload on each activity impacting the display of general status ( in progess and done)

To know if you re in advance or late  you ve just to compare your situation with WHAT YOU VE EXPECTED  ( on column for validated dates ) . it is your own appreciation , your own business with your customer that you had validated on the past.  In the meantime Real live took place ( work made as planned ? , workload changes ? others modificationabout the perimeter ? ) so forecasting and steering  the deviations seems to be easy comparing both of them ( the end date expected - the real end  date given by the application )

To sum up : A project could be done ( generally when remainding work is zero) either late either  just in time or in advance,  Compare end date ( it is done)  or planified end (during your project) date  with validated end, and you will know if you are or in a good or wrong way.

Just set left work to zero.
