J'ai depuis quelque jour un problème de caractères, j'ai plus aucun accent ou apostrophe, alors que je n'est fait aucune manipulation.

If accents were present and are not any more, sure there was some manipilation done (maybe not yours, but there is)
It could be :
- export / import with bad encoding
- change of PHP server parameters
- change of MySql server parameter
- change of some projector parameter (for instance the value for $enforceUTF8)
Find what was done, you'll get how to fix.
