Can a simple approval flow be setup for tickets?
If possible, what is the best way to go about setting this up?
Is there a tutorial or sample approval setup I can look at?

Each element can be driven by a different workflow.
You choose the states that will be in this workflow and the rights for each of them.
You can refer to the manual on workflow administration or you can register for our next training course in French on configuring ProjeQtOr !
