From my experience, I understand that meetings are taken into account in Gantt, until they are in "closed" status.
My questions :
- Can we disable displaying meetings in Gantt ?
- Where is configured the condition of displaying meetings in Gantt (i.e. displayed until closed ?)

No
But you can put then under a dedicated activity and "collapse" the activity so that you'll have only one line.

Nowhere.
It is default behavior, also applied to activities and milestines : they are always visible until closed.
