The assigned workload is automatically filled in when you assign workload in the assignments table to the resources that will work on your activity.
The real, meanwhile, is filled in automatically when the resource begins to fill in its working time on its Timesheets.
The date indicated in dates and durations corresponds to the date of the first imputation.

You will only see this assignment table on activities (or other planned item) In the progress tab > Assignment
Your screenshot shows that you are on the projects screen. On this screen you will see the allocation table which indicates the users, resources and contacts that are part of this project.
